Peanut Sauce

1. Assemble ingredients: creamy unsalted peanut butter(3/4 cup), garlic(2 cloves), fresh grated ginger(3 tbsp), red pepper flakes(1/2 tsp), honey(2 tbsp), soy sauce or tamari(3 tbsp), rice vinegar(1 tbsp), toasted sesame oil(2 tsp), light coconut oil or water(1/3 cups), and optional chopped cilantro(1/4 cups).
2. Add all of the ingredients besides cilantro to a powerful blender or food processor and run until smooth. Taste and adjust as preferred. Add the cilantro. Add water/coconut oil as needed.
3. Give it another few pulses and keep in an airtight jar in the fridge.
